Leeks have a natural sweetness, a subtle onion flavour and this can make some great sweet meals for all the family.
Leeks are available all year round, mostly harvested in winter with February being the best month. In Albania leeks are plentiful with leek sellers pitched up on every street. Leek pies, bakes and soups date back to some of the first Albanian recipes.
Did you know?
The Albanian word for leeks is ‘Pras’. In the north as part of their dialect the word ‘Presh’ is used instead, which is also used at times for ‘Onion’ (leeks are part of the onion family). When you see recipes using ‘Presh’ it is referring to leeks, onion recipes tend to use their official word ‘Qepë’.

With a natural sweetness to the dish, the leeks are slowly baked with lamb mince and roasted peppers. Full of flavour and softness.
