TIP #1: Bread with Casseroles
Once your casserole is cooked, slice a french baguette into thin slices and lay them over the top of the casserole in the dish, slightly overlapping each other. Sprinkle with cheese and place back in the oven for 10 minutes or until the cheese is golden. Bread will become cheesy crisp on top and a gooey casserole infused bread underneath!
TIP #2: Baking Soda in Cakes
Baking soda acts as a rising agent when heated, therefore when baking a cake that includes baking soda like Albanian Ravani, I find I get the best rise of the cake when I mix the soda into the ingredient that has the acidic components first before mixing into the other ingredients (in Ravani it is the yogurt).
TIP #3: Garlic Infusion for Recipes
If you don’t make a lot of recipes with Garlic in, there is some other ways to add garlic without the need of a fresh garlic. I keep a bottle of Garlic infused olive oil in my cupboard, when I do not have any garlic I add this into the recipe. You could also use Garlic Pepper instead of black pepper as an additional twist.
TIP #4: Extra Texture & Spicy Addition
I always keep some Chorizo or Salami in my fridge, it’s perfect for giving left over meals an extra texture and kick. You can even add some to main recipes, especially the ones that include chicken or tomatoes. Not sure about Chorizo? Well, I also have a further cheat to create a similar flavor, add some sliced hot dogs or frankfurters with a teaspoon of paprika!
