- 2 Ready Rolled Pizza Dough
- 4 Handful TurkeyAprprox. 300g
- 1 Diced Aubergines
- 1 Diced Courgette
- 1 Diced Red Peppers
- 2 Diced Green Peppers
- 1 Diced Onions
- 5cm Diced Albanian Salami
- 4 Tbsp Pizza Sauce
- 360g Cheddar Cheese
- 1 Tbsp Basil
- Olive Oil
Turkey is a large piece poultry and will often be used over a few days. There are so many different recipes that can be made with it but apart from a nice big roast, this turkey calzone pizza is one of my favourites!
Tip: Ensure all the olive oil is cooked away before adding the pizza sauce. This will prevent the mixture becoming wet and making the dough soggy.
Prepare the Filling
Cook the Aubergine and courgette for a few minutes in the olive oil before adding the onion, peppers, some basil and pepper. Cook until softened (about 15 minutes).
Add the Albanian salami and turkey, cooking for a few minutes longer - ensuring all the olive oil has cooked away.
Take off the heat and add the pizza sauce - stir well.
Create the Calzones
While the mixture cools for a few minutes, add a pizza dough to a large foil covered round pizza tray or a baking tray.
Add half the filling and two handful of cheese on top keeping everything to one side of the dough. Fold the base in half, over the filling to make a semi circle.
Seal the calzone pizza by folding / twisting the edges together.
Add the other pizza dough to the tray with half hanging the edge and repeat by folding inwards toward the previous calzone made. You will end up with two calzone pizza's side by side and can be cooked together in one go.
Bake in the oven on 180 degrees for 25 minutes or until golden brown.
