- 12 Lamb Chops
- 1 Diced Red Peppers
- 1 Diced Green Peppers
- 1 Diced Yellow Pepper
- 2 Diced Red Onion
- 1 Tbsp Rosemary
- Olive Oil
Serving plates of meat when you have visitors is an Albanian tradition. This lamb chop bake looks great when brought to the table as the colours of the peppers stand out.
Tip: A great way to cook meat when visitors stay to eat – add more or less chops as required. 1 Hour will cook to medium, adjust the cooking time for about 30 minutes longer for well done.
Prepare the Dish
In a large casserole dish, cover the base with a drizzle of olive oil so the whole dish is covered.
Add the lamb chops in first then cover with the peppers and onion. Season with salt, pepper and rosemary
Place in the oven on 180 degrees for 1 hour turning the chops over plus stirring the peppers and onion after 30 minutes.
Try adding sliced tomatoes to create a wetter bake. Or extra red or green peppers for a more sweeter / sour taste.
